Recipe | Pumpkin Spice Crumb Cake

INGREDIENTS:


FOR THE CRUMB TOPPING:

  • 1 cup all-purpose flour

  • 1 cup packed light brown sugar

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon fine salt

  • 1/2 cup unsalted butter, cold and cut into small cubes

FOR THE CAKE:

  • 2 cups all-purpose flour

  • 3 teaspoons baking powder

  • 1 teaspoon fine salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

  • 1 1/4 cups pumpkin puree

  • 1/2 cup vegetable oil

  • 2 cups granulated sugar

  • 2 large eggs (room temperature)

  • 1 teaspoon vanilla extract

  • 1 cup buttermilk or milk (room temperature)

FOR THE VANILLA ICING:

  • 1 cup powdered sugar

  • 2 tablespoons milk

  • 1/4 teaspoon vanilla extract

INSTRUCTIONS:


PREPARE THE CRUMB TOPPING:

  1. Preheat your oven to 350°F (175°C).

  2. Grease a 9×9-inch square or 9×13-inch rectangle baking pan with baking spray and set aside

  3. In a medium bowl, whisk together the flour, light brown sugar, cinnamon, nutmeg, and salt

  4. Cut the cold butter cubes into the dry ingredients using a pastry cutter or your hands until large crumbs form. Set aside.

PREPARE THE CAKE BATTER:

  1. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.

  2. In a large bowl, whisk together the pumpkin puree, vegetable oil, and granulated sugar until smooth.

  3. Add the eggs one at a time, whisking until each is fully incorporated, then stir in the vanilla extract.

  4. Gradually add the dry ingredients to the pumpkin mixture in three parts, alternating with the buttermilk in two parts. Mix until just combined.

  5. Pour the cake batter into the prepared baking pan and spread it evenly.

  6. Sprinkle the crumb topping evenly over the batter and gently press it into the cake.

    Bake the Cake

  7. Bake for 30-35 minutes for a 9x9-inch pan or 20-25 minutes for a 9x13-inch pan, until a toothpick inserted comes out with a few moist crumbs. Let the cake cool slightly before adding the glaze.

PREPARE AND ADD VANILLA ICING

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth

  2. Drizzle the icing over the warm crumb cake
